A simple and healthy recipe from the cook book “Eat Beautiful” by Wendy Rowe
Hi all! I have to tell you about a cookbook I’ve been absolutely loving lately. The title is
“Eat Beautiful” and it’s written by make up artist Wendy Rowe. The book is well organized and east to read. The book is organized by the 4 seasons. Each Season begins with an overview of the vegetables, fruits, grains, and meat that’s not only in season but compliments the climates effect on your body and skin.
When I read cookbooks, I always sticky note the recipe I must try asap. I’ll incorporate the ingredients into my grocery routine and then enjoy putting it together. I find following a recipe like putting together a puzzle, I love it and don’t do it often – I’m a “create my own puzzle” kind of girl when in the kitchen.
This recipe stood out to me because of the ingredients. They are simple and all things I love. Avocado, smoked salmon, arugula, and eggs! The only things that made me nervous was flipping this bad boy in the pan. Just gonna say it – it couldn’t have gone better.
I simply whisked 3 eggs, salt, pepper, cayenne pepper, and a tbsp of almond milk. Greased a pan thoroughly with coconut oil, no way I was letting this stick to the pan, and voila – you have an egg “wrap.”
I followed her fillings, except instead of parsley I added a light sprinkling of hemp seeds for a little earthy touch of omegas. The squeeze of lemon was the right amount of acidity. Make sure the smoked salmon is wild caught and there’s no added color! Always check for that, smoked salmon can either be a healthy treat or very unhealthy if you don’t check the ingredients and sodium content.
The smokiness of the salmon paired with creamy avocado and that peppery crunch of arugula was wonderful. Of course, now I’m thinking of all the different combos to add inside.
